- In a large bowl of a stand mixer, mix together all the flour and salt..
- Make a well in the flour mixture. Pour the oil into the well..
- Use the dough hook and stir on low for about 10 minutes while slowly adding in the water. Add more water or flour as needed..
- Take dough out of stand mixer and knead a few times by hand into a smooth ball..
- Wrap dough bowl in plastic wrap or put inside a covered bowl. Chill for 30 minutes..
- Take dough ball out of fridge. Divide into 4 pieces. Work on 1 piece at a time while covering the others to prevent dough from becoming too dry..
- Roll small piece of dough flat and shape as desired either by hand or using a pasta maker..
- Boil a pot of water with salt added. Cook fresh pasta for about 5 mins or until desired softness..
- When done, take pasta out and strain. Add sauce, seasonings, herbs, and other ingredients as desired..
It is by far the best one. Making fresh pasta can be an intimidating process, especially if you're not used to working with flour and water. But it's also an imminently achievable skill, and once you're comfortable with the basic technique, there's really no reason why you can't reap the rewards on a regular basis.
